Coffee Granola

Crunchy. Coffee. Craveable. This Coffee Granola is packed with bold coffee flavor and makes the perfect anytime fuel — whether on yogurt, with milk, or straight from the jar! ☕🥜

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1/2 cup chopped nuts (almonds, pecans, or walnuts)
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tbsp ground flaxseed (optional)
  • 1/2 cup brewed coffee, cooled
  • 1/4 cup maple syrup (or honey)
  • 2 tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp instant espresso powder
  • Pinch of salt

Add-Ins (Optional)

  • Dark chocolate chips
  • Dried fruit
  • Coconut flakes
  • Chia seeds

How to Make It

  1. In a large bowl, mix oats, nuts, seeds, flaxseed, cinnamon, espresso powder, and salt.
  2. In a separate bowl, whisk together cooled coffee, maple syrup, coconut oil, and vanilla.
  3. Pour wet ingredients over the dry ingredients. Stir well to coat.
  4. Spread mixture evenly on a parchment-lined baking sheet.
  5. Bake at 325°F (163°C) for 25–30 minutes, stirring halfway through.
  6. Let cool completely. Add mix-ins if using. Store in an airtight container.
