Mocha Banana Bread

Ingredients
- 3 ripe bananas, mashed (about 1 1/2 cups)
- 1/3 cup melted butter or oil
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp strong brewed coffee, cooled
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp instant espresso powder
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup chopped dark chocolate or chocolate chunks (optional)
Optional Topping
- Extra chocolate chips or chopped chocolate for sprinkling on top before baking
How to Make It
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together mashed bananas, melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and brewed coffee until well combined.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and espresso powder.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- Fold in chocolate chips and chopped chocolate, if using.
- Pour batter into the prepared loaf pan. Sprinkle extra chocolate on top if desired.
- Bake for 60–65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy with your favorite coffee!
