Ingredients
Makes 1 Serving
- 4 tbsp all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp brown sugar, packed
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp baking powder
- 1/8 tsp salt
- 3 tbsp milk
- 2 tbsp strong brewed coffee (cooled)
- 2 tbsp vegetable oil
- 1/4 tsp vanilla extract
- 1/2 tbsp instant espresso powder or strong coffee granules (optional)
- 1 tbsp mini chocolate chips (optional)
For the Topping (Optional)
- Whipped cream or coffee whipped cream
- Chocolate shavings or cocoa powder
- Caramel or chocolate drizzle
How to Make It
- In a microwave-safe mug (at least 10 oz/300 ml), whisk together flour, sugars, cocoa powder, baking powder, salt, and espresso powder (if using).
- Add milk, brewed coffee, oil, and vanilla extract. Stir until smooth and well combined.
- Fold in mini chocolate chips if using.
- Microwave on high for 70–90 seconds, depending on your microwave. Start with 70 seconds and add 10 more if needed.
- The cake should be set on top and slightly soft in the center.
- Let it cool for 1–2 minutes.
- Top with whipped cream, chocolate shavings, or a drizzle of caramel.
- Enjoy directly from the mug (carefully, it will be hot!).
- Best enjoyed immediately.
