Dates, nuts, and matcha – simple & satisfying.

Naturally sweet, packed with energy & matcha goodness — the perfect bite! Made with natural ingredients, no bake & super easy, perfect for on-the-go, and energy that lasts.

Ingredients

  • 1 cup (120g) pitted dates (soft medjool)
  • 1/2 cup (65g) almonds
  • 1/4 cup (35g) cashews
  • 1/4 cup (25g) rolled oats
  • 1 tbsp matcha powder (ceremonial grade)
  • 1 tbsp chia seeds
  • 1 tbsp shredded coconut (unsweetened)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Prep the dates: If dates are dry, soak in warm water for 5–10 minutes, then drain.
  2. Blend: Add dates, almonds, and cashews to a food processor. Pulse until finely chopped and sticky.
  3. Add the rest: Add oats, matcha powder, chia seeds, coconut, vanilla, and salt. Pulse again until well combined. Mixture should hold together when pressed.
  4. Roll: Scoop tablespoon-sized portions and roll into balls.
  5. Chill: Refrigerate for at least 30 minutes to firm up.
  6. Store: Keep in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.

Makes about: 12–14 bites
