Matcha Roasted Blueberries

Matcha Roasted Blueberries

Warm, juicy blueberries with a matcha twist – amazing on ice cream!

Sweet, juicy, and bursting with flavor — the ultimate matcha topping! Natural antioxidants & flavor, elevates every dessert, easy to make, and perfect on ice cream, yogurt & more!

Ingredients

  • 2 cups (300g) fresh blueberries
  • 1 tbsp maple syrup or honey
  • 1 tsp coconut oil (optional, for roasting)
  • 1 tsp matcha powder (ceremonial grade)
  • Pinch of sea salt

Instructions

  1. Prep & preheat: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss the blueberries: In a bowl, toss blueberries with maple syrup and coconut oil (if using) until evenly coated.
  3. Roast: Spread blueberries in a single layer on the baking sheet. Roast for 15–18 minutes, stirring halfway through, until they’re soft and juicy but not falling apart.
  4. Add matcha: Remove from oven and let cool for 5 minutes. In a small bowl, whisk matcha powder with a pinch of sea salt. Sprinkle over warm blueberries and gently toss to coat.
  5. Serve: Spoon over ice cream, yogurt, pancakes, or oatmeal. Enjoy warm!

Makes about: 2 cups

Dr. Kesha's Tip: Roasting brings out natural sweetness and makes the blueberries extra juicy and irresistible!
