Coffee Chocolate Truffles

Ingredients
- 1 cup dark chocolate (70%), chopped
- 1/2 cup heavy cream
- 2 tbsp strong brewed coffee, cooled
- 1 tbsp unsalted butter
- 1 tbsp coffee liqueur (optional)
- 1 tsp instant espresso powder
- 1/2 tsp vanilla extract
- Pinch of salt
For Coating (choose any)
- Cocoa powder
- Finely grated dark chocolate
- Crushed coffee beans
- Chocolate sprinkles
How to Make It
- Heat cream and brewed coffee in a saucepan until just simmering. Remove from heat.
- Add chopped chocolate, butter, espresso powder, and salt. Let sit for 2 minutes, then stir until smooth.
- Stir in vanilla extract and coffee liqueur (if using).
- Cover and refrigerate for at least 2 hours or until firm.
- Scoop out small portions and roll into balls.
- Roll each truffle in your choice of coating.
- Place on a lined tray and refrigerate for 30 minutes to set.
- Store in an airtight container in the fridge. Enjoy chilled!
