Coffee Roasted Nuts

Ingredients

  • 2 cups mixed nuts (almonds, cashews, pecans, walnuts)
  • 2 tbsp unsalted butter, melted
  • 2 tbsp brown sugar
  • 1 tbsp honey or maple syrup
  • 1 tbsp instant coffee or espresso powder
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/4 tsp vanilla extract
  • Pinch of cayenne pepper (optional)

  • Almonds
  • Cashews
  • Pecans
  • Walnuts
  • Peanuts

How to Make It

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together melted butter, brown sugar, honey, coffee, cinnamon, vanilla, salt, and cayenne (if using).
  3. Add the mixed nuts and toss until evenly coated.
  4. Spread nuts in a single layer on the prepared baking sheet.
  5. Bake for 18–22 minutes, stirring halfway through, until fragrant and golden.
  6. Let cool completely. Nuts will crisp up as they cool.
  7. Store in an airtight container and enjoy!
