Ingredients
For the Choux Pastry
- 1 cup water
- 1/2 cup unsalted butter
- 1 tbsp brown sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 large eggs
For the Coffee Cream Filling
- 1 1/2 cups heavy whipping cream
- 2 tbsp powdered sugar
- 2 tbsp instant espresso powder or strong coffee (cooled)
- 1 tsp vanilla extract
- 1/2 cup mascarpone cheese (optional, for richness)
For the Coffee Glaze (Optional)
- 1/2 cup powdered sugar
- 1–2 tsp strong brewed coffee
- 1/2 tsp cocoa powder (optional)
How to Make It
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, bring water, butter, brown sugar, and salt to a boil. Add flour all at once and stir until a dough forms.
- Remove from heat and let cool for 5 minutes. Add eggs one at a time, beating until smooth and glossy.
- Pipe or spoon dough into 12 mounds on prepared sheet.
- Bake for 20–25 minutes, or until golden and puffed. Turn off oven and leave door slightly open 5 minutes before removing.
- Cool completely on a wire rack.
- For filling: Whip cream, powdered sugar, espresso, vanilla, and mascarpone until soft peaks form.
- Pipe or spoon coffee cream into cooled puffs.
- For glaze: Mix powdered sugar, coffee, and cocoa until smooth. Drizzle over puffs. Let set.
- Serve immediately and enjoy!
