Coffee Madeleines

Ingredients

For the Madeleines

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp strong brewed coffee (cooled)
  • 1/2 cup unsalted butter, melted and cooled
  • 1 tbsp instant espresso powder or strong coffee granules

For the Coffee Glaze (Optional)

  • 1/2 cup powdered sugar
  • 1 tsp strong brewed coffee or espresso
  • 1/2 tsp vanilla extract
  • Pinch of salt

How to Make It

  1. Preheat oven to 375°F (190°C). Grease a madeleine pan lightly with butter.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, whisk eggs and sugar until pale and slightly thickened.
  4. Add vanilla, brewed coffee, and espresso powder. Whisk to combine.
  5. Fold in dry ingredients until just combined. Gently fold in melted butter.
  6. Cover and chill batter for at least 30 minutes.
  7. Spoon batter into prepared madeleine molds, filling each about 3/4 full.
  8. Bake for 12–14 minutes, or until edges are golden and centers spring back. Cool in pan for 5 minutes, then transfer to a wire rack.
  9. For glaze: Whisk powdered sugar, coffee, vanilla, and salt until smooth. Drizzle over cooled madeleines.
