Coffee Muffins

Ingredients
- 2 cups all-purpose flour
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup strong brewed coffee, cooled
- 1/2 cup milk
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp instant espresso powder or strong coffee granules
- 1/2 cup mini chocolate chips (optional)
For the Top (Optional)
- 2 tbsp brown sugar
- 1 tsp instant espresso powder or cinnamon
How to Make It
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and espresso powder.
- In another bowl, whisk together brewed coffee, milk, oil (or melted butter), eggs, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir just until combined. Fold in chocolate chips if using.
- Divide batter evenly among muffin cups.
- In a small bowl, mix brown sugar with espresso powder (or cinnamon) and sprinkle over muffin tops.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm!
