Coffee Panna Cotta

Ingredients

For the Panna Cotta

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 2 tsp instant espresso powder
  • 2 tbsp strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 2 1/4 tsp unflavored gelatin powder (1 packet)
  • 3 tbsp cold water

For the Coffee Caramel Sauce (Optional)

  • 1/2 cup granulated sugar
  • 2 tbsp strong brewed coffee
  • 2 tbsp heavy cream
  • 1 tbsp unsalted butter
  • Pinch of salt

How to Make It

  1. Sprinkle gelatin over cold water in a small bowl. Let sit for 5 minutes to bloom.
  2. In a saucepan over medium heat, combine cream, milk, sugar, espresso powder, and brewed coffee. Stir until sugar dissolves and mixture is hot (do not boil).
  3. Remove from heat. Add bloomed gelatin and stir until fully dissolved. Stir in vanilla.
  4. Pour into 4–6 ramekins or glasses. Let cool slightly, then refrigerate for at least 4 hours or overnight.
  5. For the sauce: melt sugar in a saucepan until amber. Add coffee, cream, butter, and salt. Stir until smooth. Cool.
  6. To serve: run a knife around the edge and invert onto a plate, or serve in the glass. Drizzle with coffee caramel sauce.
