Coffee Pound Cake

Rich. Moist. Coffee-Infused. Perfectly Indulgent.

A rich loaf cake with a silky coffee glaze — dense, moist, and perfectly indulgent. This Coffee Pound Cake is the kind of treat that makes every moment feel special. ☕🍰

Ingredients

For the Cake

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 tbsp strong brewed coffee, cooled
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sour cream

For the Coffee Glaze

  • 1 cup powdered sugar
  • 2 tbsp strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 1–2 tsp milk or cream (as needed for consistency)
  • Pinch of salt

How to Make It

  1. Preheat oven to 325°F (163°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla and coffee.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, alternating with sour cream, beginning and ending with dry ingredients. Mix just until combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. Whisk glaze ingredients until smooth. Drizzle over cooled cake.
  10. Let glaze set for 10–15 minutes before slicing. Enjoy!

Dr. Kesha's Tip: For a stronger coffee flavor, brush the warm cake with an extra tablespoon of brewed coffee before glazing.
