Coffee Pound Cake

Ingredients
For the Cake
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 2 tbsp strong brewed coffee, cooled
- 2 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup sour cream
For the Coffee Glaze
- 1 cup powdered sugar
- 2 tbsp strong brewed coffee, cooled
- 1 tsp vanilla extract
- 1–2 tsp milk or cream (as needed for consistency)
- Pinch of salt
How to Make It
- Preheat oven to 325°F (163°C). Grease and flour a 9x5-inch loaf pan.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla and coffee.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, alternating with sour cream, beginning and ending with dry ingredients. Mix just until combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
- Whisk glaze ingredients until smooth. Drizzle over cooled cake.
- Let glaze set for 10–15 minutes before slicing. Enjoy!
