Ingredients
For the Coffee Pudding
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1/4 cup strong brewed coffee, cooled
- 1 tbsp instant espresso powder
- 1 tsp vanilla extract
- Pinch of salt
For the Whipped Cream
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
For Assembly (Optional)
- 1/2 cup chocolate cookie crumbs or crushed chocolate wafers
- Chocolate shavings or coffee beans for garnish
How to Make It
- In a saucepan, whisk together sugar and cornstarch.
- Add milk, heavy cream, brewed coffee, and espresso powder. Whisk until smooth.
- Cook over medium heat, whisking constantly, until the mixture thickens and just begins to bubble.
- Remove from heat and stir in vanilla extract and salt. Strain for extra smooth pudding (optional).
- Divide cookie crumbs among serving cups. Pour pudding over the crumbs.
- Press plastic wrap onto the surface of the pudding. Chill for at least 2 hours or until set.
- Whip cream with powdered sugar and vanilla until soft peaks form.
- Pipe or spoon whipped cream on top. Garnish with chocolate shavings or coffee beans. Serve chilled.
