For the Coffee Glaze (Optional)
- 1/2 cup powdered sugar
- 1 tsp instant espresso powder or strong coffee granules
- 1–2 tbsp milk or cream
How to Make It
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and espresso powder.
- Cut in cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
- In a separate bowl, whisk together cream, egg, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in chocolate chips or nuts if using.
- Turn dough onto a floured surface and shape into an 8-inch circle, about 1-inch thick. Cut into 8 wedges.
- Place scones on baking sheet, spacing apart. Brush tops with a little cream if desired.
- Bake for 18–22 minutes, or until golden brown.
- Cool on a wire rack.
- Optional: Whisk glaze ingredients until smooth and drizzle over cooled scones.
Dr. Kesha's Tip: For deeper flavor, chill the shaped scones for 15–20 minutes before baking. It helps create a flaky texture!
