Mocha Cheesecake Bars

Ingredients
For the Crust
- 1 1/2 cups chocolate cookie crumbs (about 20 cookies)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling
- 16 oz (2 blocks) cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 1/2 cup brewed coffee, cooled
- 1 tbsp instant espresso powder
- 1 tsp vanilla extract
- 2 large eggs
For the Chocolate Topping
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1 tsp instant espresso powder (optional)
How to Make It
- Preheat oven to 325°F (163°C). Line an 8x8-inch pan with parchment paper.
- Make the crust: Mix cookie crumbs, sugar, and melted butter. Press firmly into the pan. Bake for 10 minutes. Let cool.
- Make the filling: Beat cream cheese and sugar until smooth. Add sour cream, coffee, espresso powder, and vanilla; mix well.
- Add eggs one at a time, beating just until combined. Pour over the cooled crust.
- Bake for 35–40 minutes, until the center is set with a slight jiggle. Cool completely, then chill for at least 4 hours.
- Make the topping: Heat cream until simmering. Remove from heat and add chocolate chips and espresso powder.
- Stir until smooth and glossy. Let cool slightly, then pour over the cheesecake.
- Chill until set. Slice into bars and enjoy!
