Matcha Granola
Oats baked with matcha and maple syrup.
Crunchy, lightly sweet & full of flavor! Perfect for any time. Made with ceremonial grade matcha, sweetened naturally with maple syrup, and high in fiber & a good source of energy.
Ingredients
- 3 cups (270g) rolled oats
- 1/2 cup (60g) raw almonds, chopped
- 1/4 cup (30g) pumpkin seeds
- 1/4 cup (30g) shredded coconut (unsweetened)
- 1/4 cup (60ml) maple syrup
- 1/4 cup (60ml) coconut oil, melted
- 1 tsp vanilla extract
- 1 1/2 tsp matcha powder (ceremonial grade)
- 1/4 tsp salt
- 1/2 cup (75g) dried cranberries or raisins (added after baking)
Instructions
- Preheat: Preheat oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, almonds, pumpkin seeds, coconut, matcha powder, and salt.
- Mix wet ingredients: In a small bowl, whisk together maple syrup, melted coconut oil, and vanilla extract.
- Combine: Pour wet ingredients over the dry ingredients. Stir well until everything is evenly coated.
- Bake: Spread mixture evenly on the baking sheet. Bake for 18–22 minutes, stirring once halfway, until golden and crisp.
- Cool & add fruit: Let granola cool completely (it will crisp up as it cools). Stir in dried cranberries or raisins. Store in an airtight container.
Makes: 10–12 servings
