Moist, nutritious & naturally sweet — perfect for any time! Made with ceremonial grade matcha, high in protein & plant-based goodness, and naturally sweetened with no refined sugar.
Ingredients
- 3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup (60ml) unsweetened almond milk (or milk of choice)
- 1/4 cup (60ml) maple syrup (or honey)
- 1/4 cup (60ml) coconut oil, melted
- 1 tsp vanilla extract
- 1 3/4 cups (210g) oat flour (or whole wheat flour)
- 1/2 cup (30g) vanilla protein powder
- 1 1/2 tsp matcha powder (ceremonial grade)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup dark chocolate chips (optional)
Instructions
- Prep: Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease lightly.
- Mix wet ingredients: In a large bowl, mash bananas. Add eggs, almond milk, maple syrup, coconut oil, and vanilla. Whisk until smooth.
- Mix dry ingredients: In another bowl, whisk together oat flour, protein powder, matcha powder, baking powder, baking soda, and salt.
- Combine: Add dry ingredients to wet ingredients. Stir until just combined. Fold in chocolate chips if using.
- Bake: Pour batter into prepared loaf pan. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & enjoy: Let cool in pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!
Makes: 1 loaf (9x5-inch)
